chili and cornbread

yesterday we tried out two new recipes. this "insanely easy" vegetarian chili to use up some beans i had and "excellent and healthy" cornbread. i'm not sure that you could call that chili recipe insanely easy since it required a lot of chopping.

but i didnt mind, because while i was chopping...

oscar was chopping with his play knife. he loves veggies.. i was worried we wouldnt have any carrots, celery, bell peppers or mushrooms left for in the chili. he just kept on munching them. i think this makes us the luckiest parents ever...

and finally, our healthy dinner. it was deeelicious. we ended up adding way more spices to the chili and served it with cheese and sour cream. for the cornbread i used 1/2 c. ww flour and 1/2 c. bread flour.. i think the best way to describe it is rustic. i really enjoyed it and will probably try it with all ww flour and cornmeal. i'm really not sure that it's all that much healthier.. it doesn't have oil, which is good, but 2 eggs instead of the one i use in regular cornbread. and is cooking with fat free plain yogurt healthier than fat free milk? i have no idea...

hmmm...i've put a lot of stuff in chili (broccoli, zucchini, carrots, etc.) but never mushrooms. and i've been hungry for cornbread for weeks. i'm glad someone is actually eating some. :)
